Our stone ground flours are milled and packaged to order weekly so that our customers receive the highest quality product we can provide. We offer both whole grain and bolted flour.

Whole grain flour is exactly that, we put the cleaned grain into our mill and what comes out is what you get, with nothing added and nothing taken away. Keeping the bran in gives the flour a rougher, more varied texture and a stronger flavor.

Bolted flour is whole grain flour that has been sifted through a series of screens designed to remove the heavier, larger pieces of bran while leaving most of the germ. This results in a consistent, flavorful fine textured flour.

Stone Ground Wheat Flours

Pastry Flour
Our pastry flours, with their mild yet distinctive wheaty flavors, bring much more to your recipes than typical pastry flour. Their soft buoyant texture makes them wonderful in muffins, pancakes, quick breads, and light pastries or wherever pastry flour is called for. For delicate pastries we recommend using bolted flour, for more rustic textures our whole wheat flour.

Richland **Sold out unitl late Summer of 2012** is our soft white winter wheat. It has a more subtle flavor and a slightly coarser crumb. Bravo is our soft red winter wheat. It has slightly more protein, a mild flavor and a finer crumb.

Bread Flour
Bread flours make a stronger, more elastic dough that is perfect for sourdoughs, yeast breads, pizza crusts and bread machine loafs. Either bolted or whole wheat flour could be used in your bread recipes depending on your taste and textural preferences.

Zorro a hard red winter wheat with a less assertive wheat flavor that is nice in a sandwich loaf. This flour is 16.9% protein. Warthog a hard red winter wheat with an intense wheat flavor that is appropriate for artisanal or sourdough breads. This flour is 15.4% protein.

Stone Ground Specialty Flours

Barley Flour
With its naturally low protein, barley flour most closely resembles cake flour. Its distinct nutty flavor works very well in pancakes, quick breads and cookies. When bolted, barley flour makes a light cake with enough strength to decorate or stack into two or three layers.

Spelt Flour
Splet flour is very similar to wheat flour. It works well in quick breads, pancakes, cookies, and yields and extensible dough perfect for thin crust pizza.

Triticale Flour
Triticale is a hybrid between wheat and rye. Using bolted triticale in place of cake flour results in a high rising, sturdy cake with a fine delicate crumb. Tart shells made with triticale flour are more flakey. Baking with triticale flour adds a subtle rye flavor that balances out the sweetness of cakes, pastries and cookies.

Buckwheat Flour
Commonly mistaken for a grain, this herb mills into a flour that can be utilized in most baker’s recipes from pancakes to cookies to quick breads. With its distinctive earthy flavor, buckwheat is a unique addition to the baker’s toolbox. High in fiber, amino acids, and protein, buckwheat flour is very nutritious. This flour is only available as a bolted flour .

Stone Ground White Cap Flint Corn

When our family moved to Massachusetts from Rhode Island we missed our Johnny cakes. When the opportunity arose we jumped at the chance to plant some of our own Rhode Island Whitecap Flint Corn (the original Johnny Cake corn). This corn meal tastes great in everything from cornbread to polenta made from scratch. And of course Johnny cakes.
